Cookies

Cookies

Date Oatmeal Cookies (Becky)

(Another favorite from Grandma Oleson. Given to Dad by his 3rd grade teacher).

1 cup butter

1/2 cup coconut

1 1/2 cups brown sugar

1/2 cup walnuts

2 eggs

1 cup rolled oats

1 teaspoon soda

1 pound dates chopped up

1 teaspoon vanilla

2 cups flour (use 1/2 cup on the dates)

Mix altogether and drop on the cookie sheet. Preheat oven to 350, bake for 8-10 minutes.

Mom's Old Fashioned Soft Molasses Cookies (Becky)

(These are a favorite that mom would make when we were growing up.)

1/2 cup sugar

2 teaspoons baking soda

1 cup Wesson oil

1 heaping teaspoon cinnamon

1 egg

1 heaping teaspoon ginger

1 1/4 cups molasses

1 teaspoon salt

Preheat oven to 350

Mix ingredients. Shape into balls, mash with a fork or glass dipped in sugar. Bake for 10 minutes.

Stir-n-drop Sugar Cookies (Mom)

2 eggs

2/3 cup vegetable oil

2 tsp vanilla

1tsp grated lemon rind or lemon extract

¾ cup sugar

2 tsp baking powder

½ tsp salt

2 cups flour

Drop by spoonful. Flatten with greased bottom of glass dipped in sugar. Bake at 350 for 8-10 minutes.

Soft and Chewy Chocolate Peanut Butter Cookies (Aleisa)

1 pkg devil's food cake mix

4 oz. Cream Cheese, softened

½ cup peanut butter

1 egg

Place all ingredients in large bowl. Beat with electric mixer on low speed 2 min. Beat on medium speed an additional 2 min.

Shape into balls. Flatten each ball in a criss-cross pattern with a fork dipped in sugar.

Bake 7-8 min. at 375

Molasses Crinkles (Becky)

(Again from Grandma and my kids favorite.)

1 1/2 cups butter or shortening 4 teaspoons soda

2 cups brown sugar 1/2 teaspoon salt

2 eggs 2 teaspoons cinnamon

1/2 cup molasses 2 teaspoon ginger

4 1/2 cups flour 1 teaspoon cloves

Preheat oven to 375

Cream shortening, sugar and eggs. Add molasses and spices. Add remaining dry ingredients. It says to chill the dough, but I never have and the cookies are fine. You decide. Roll dough to the size of a walnut. Dip in sugar (optional). Place on a greased cookie sheet 3 inches apart. Criss cross the tops with a fork. Bake for 10-12 minutes.

Peanut Butter Cookies (Mom)

¾ cup butter

1 cup chunky peanut butter

1 cup brown sugar

1 cup sugar

2 eggs

1 ½ tsp soda

1 tsp baking powder

½ tsp salt

2 cups flour

Cream together butter, peanut butter, sugar and eggs. Add dry ingredients and mix well. Roll into small balls and place on cookie sheet. Smash with floured fork in criss-cross design. Bake at 350 for 8-10 minutes.

Aleisa's alternate. Don't smash with fork. Place a hershey kiss in the middle.

Snickerdoodles (Mom)

1 cup butter

1 ½ cups sugar

2 eggs

2 tsp cream of tartar

1 tsp soda

¼ tsp salt

2 ¾ cups flour

Roll into balls and roll in mixture of sugar and cinnamon (2 Tbsp sugar and 1 tsp cinnamon).

Smash with fork in criss-cross design. Bake at 350 for 8-10 minutes

Pin-wheel Date Filled Cookies (Mom)

1 cup butter

1 cup brown sugar

2 eggs

2 Tbsp water

3 cups flour

½ tsp salt

3 tsp baking powder

½ tsp vanilla

Cream butter, add sugar. Add beaten eggs and water. Add dry ingredients a little at a time and mix until smooth. Let dough stand one hour before rolling.

Date filling

1 lb dates

1 cup sugar

1 cup water

½ cup nuts

When water is boiling add sugar. Stir until dissolved. Add dates that have been chopped. Boil until most of the liquid has evaporated. Remove, add nuts and cool. Roll out dough like cinnamon rolls. Spread date mixture on top. Roll up and cut ½ inch slices. Place on a greased cookie sheet.

Bake at 350 for 10 -15 minutes.

Spritz Cookies (Mom)

1 cup butter

1 cup sugar

1 egg

½ tsp almond extract

¼ tsp salt

½ tsp baking powder

2 ¼ cups flour

Mix together then add a few drops of food coloring (red). Bake for 9-10 minutes at 350.
