Carrot Cake (Mom)

Blend together:

3 cups flour

2 cups sugar

2 tsp soda

2 tsp cinnamon

2 tsp salt

add:

1 ½ cups oil or butter

4 beaten eggs

3 cups grated raw carrots

1 cup chopped walnuts (optional)

1 cup raisins

Becky's optional recipe to reduce fat is to substitute 1 cup applesauce for 1 cup oil.

Mix well and pour into well greased cake pan. Bake at 350 for 30 min. Reduce oven to 300 and bake an additional 25-30 minutes or until done. Cool cake and ice with cream cheese frosting.
